Cantera Negra Reposado is distilled at Don Max's Cavas, S.A. de C.V in Highlands/Los Altos, Las Pintas. It is cooked in Autoclave (high pressure) and crushed using a Roller Mill. The type of fermentation is Closed tank, and the spirit is distilled in Pot Still. Bottled at NOM #1554 with 100% agave, it is released at 40% abv (80-proof).
