It is cooked in Stone/Brick Ovens and crushed using a Roller Mill. The type of fermentation is Open-air fermentation, and the spirit is distilled in Pot Still. Bottled at NOM #1474 with 100% agave, it is released at 48.8% abv (97.6-proof).
